Living in SE Florida and for the last 6 months I've been playing with a 8 gallon stainless pot and making a lot of extra parts on my own. I enjoy making thing and learning as I go. So far I have been doing 100% all grain, no added sugar, and have enjoyed doing it the hard way. Last mash was the best so far with a starting SG 1.085 and finished at .994. just finished putting together a PID controller that works more like a SCR controller as far as the output goes. Will find out how it works in the new future. I built a 4 gallon chiller using an old discarded 1100-BTU dehumidifier that works like a dream with my setup and just did an other one using a old 1800-BTU dehumidifier and 6 gallon cooler to run a DIY dephlegmator. I almost forgot, I do not drink anymore but do taste with a dip of the finger as I go. Looking forward to learning more form this forum as I have read a lot with in it and like what I have seen.

Welcome aboard man. Nice introduction. Pid is not the rite tool for distillation. You can't control the temperature. You need to control the power. Check out the Tried and True. Shadys Sugar Shine is a great place to start. Have fun and stay safe.
