Hello everyone
Last year I had the pleasure of trying alot of safehouse distillings apple pie. According to them, they simply macerate Fuji's in 95% neutral with some baking spices, filter, and dilute to 40%.
See what's missing? I'm not sure how they did it but they dont add sugar. Yet it was plenty sweet!
I've made numerous batches of this, trying to get the sweetness similar but I can't for the life of me get the sweetness similar. It always comes out needing sugar, unlike theirs.
Has anyone experimented with apple pie without sugar or juice?

How much faith do you have that they’re not hiding a secret ingredient? There have been a few comments lately about rum and maybe whiskey which has undisclosed sugar as a secret ingredient. Could that be the case here?
What are they diluting with? Water? Apple juice?
If they really are doing as you described, then it would be interesting to see how they achieve the results you mentioned. I’d love to learn how, as that seems remarkably simple.

Find out how much sugar to expect in the juice in grams/100ml.
Find out how much sugar is in their apple pie in grams/100ml.
Calculate how much fruit or juice is required to make the batch size you want to make.
Make some, taste it, adjust your method for the next batch, repeat as many times as it takes.

I bet they proofed it with apple juice. Store bought juice tends to have over 20g of sugar per cup. Lots of sweetness.

I think you’re right. I also proof my Brandie’s with fruit juices at times. It may be a shortcut but still true as I’m not using anything artificial.
