Most of my stock is about 6 months old now, so I have been sampling. I went to sample my HBB and I didn't put any oak in it at all! I don't know how I missed that.
Anyway, my question is- can I just add oak now? And if so, does it affect it in the end? Do I need to add more or less because it has aged some?

Two months ago I finally added a stick of oak to a quart of Single Malt that I had set aside back in 2021 to compare to the stuff I aged in a 5 gallon barrel. Then I hid it again so when I find in a few years after the last of the stuff from the barrel is long gone, I'll have a surprise jar.

I think I only have a qt. Maybe I will add the oak and hide it. The longest I have aged something on oak is about 2 months. I am so nervous of over oaking, and all that work... Maybe this one I will leave a lot longer on oak. I have read bourbon has to age for at least 2 years.
you're saying you will leave it with the oak stick for the whole time you hide it? I think I will read the whole aging threads again.
Yep. I am of the mindset that a little oak, for a long time is better than a lot of oak quickly. I'm not after oak tea.
I cut all my oak "fingers" for glass aging to about .7 inches square and 5 inches long, then toast them wrapped in foil to a medium toast level before freezing and charging to a level 4.
1 finger per quart. I've still got two used fingers in the last half gallon of my single malt I pulled from the barrel. And it just keeps getting better.
