Hi Y’all!

I’m a longtime beer brewer new to this hobby. Bought a little pot still head for my digiboil mash tun and have made some great rum thanks to the recipes on this forum!

I feel like rum is a good starter project because it’s easy! No Mashing and high yield compared to grain spirits. My first wash got up to 16% before distillation! Grandma’s fancy (amber) molasses and turbinado 50/50. Light and floral. Excellent right off the still! Second batch was 2/3rds blackstrap (food grade) and 1/3 turbinado. By then I had live dunder that sat in the yard all hot summer under the Colorado pines. Heavy and intense flavors of chocolate, coffee, carob. Added a bit of clean dunder back to the jars as per Capt. Jack’s Scurvey Waters, but that’s all. AMAZING after only a week or two, continues to improve in jars with oak spirals.

Bourbon was a pain and hoping it will clean up on oak - so far grungy and musty which I am reading is normal. Next I’d like to try malt whiskey. Make an 8% wash with local barley, ferment off grain, and distill 10 gallons of that. Then back to more rum!
