A quick post to share some informations with the numerous high ester fans out here. I recently bought the "Hampden 8 marks collection" (https://www.whisky.fr/en/hampden-coffre ... 61760.html). And in it was the little gem linked below : A list of the 8 differents marks of Hampden distillery, with a tons of information about the recipes and the esters content.
For those not familiar with Hampden, they are well known for their high ester rums. They produce 8 different "mark" or type of rum : OWH being the lowest in ester and DOK the highest. Then, they blend the different marks to obtain the desired product.
A couple of very interesting information i can see here :
- The use of dunder, muck and cane vinegar : However, they don't specify when they use the different types of ingredients (beggining, middle, end of fermentation ?). Moreover, OWH and LFCH only use water and molasses and still manage to obtain quite a decent level of esters.
- The low ABV in the wash after fermentation (5% for the OWH, 2-4% for DOK). Many of us aim for a higher ABV and final yield, so this choice is quite interesting.
