New to T500

HI all

I am Mark Currently from Australia - sometimes UK and sometimes elsewhere - nice to meet you all ..
I have been distilling quite a nice drop using a small airstill , double distill and double filter with a stainless tower , but was to small so just bought a used T500 and been reading lots about this .
Have upgraded spirit pipe to copper ,
given a good clean citric acid etc
made a water regulator
put some quick connectors on

make wash from weetabix and raw cane sugar , bakers yeast , lemon juice

anyway question is there any good instructions or run through with the T500 i used to use a great guide with airstill (getting the best out of my airstill chart) somone made on UK site .
just wondering if good manual or chart or run through with the T500

stripping run what to dump in fores (150ml etc)
spirit run 150ml fores dump
then 200ml cuts keep until blah blah
keep hearts approx 1.5litres (heads and tails keep next stripping run (etc

something like this with quantities and approx times and just a step by step but not still spirits
maybe already a link or post here i cannot find ??
