New to the hobby

Well We live in RFD Alabama. I’m around 47-53 have a great family I am a machinist / farmer/ truck driver . My uncle use to run copper stills it is about 25 gallons it looks to be. He run this in his sorghum mill along side his syrup pots till he died. I have been around it my whole life but have just tried my 1st hand at making small batch of sweet corn and sugar cane syrup like he did. No other family members wanted the stills after his death so they got moved to the bone yard 15 yrs ago, My cousin called me a few weeks ago and said if I didn’t want them he was going to scrap them all out so I went and rented a 24ft enclosed U haul and brought 2 of them home. I have got to do some repairs to it before I can use it again for sure. I am really new at it, I think I understand the process for the most part, but still a novice. So that’s me and how I ended up here Thanks for help in advance
