Glass bubble plates vs copper tee bubble plates

I am looking to upgrade my 2" column to a 4" with some plates
I see there are beautiful looking copper and stainless tee bubble plates and glass columns of plates, is there any difference besides price?
Can you just remove a plate in the glass column type or do you have to leave the plate and remove the downcomers?
Looking forward to hearing some opinions on these!
