Spent a while lurking on the forum, but on a fresh account. I run a 4L Air still on an SCR as well as a 6.5 gallon Anvil Foundry I've converted into a pot still with parts on the way to expand with a CCVM column. My go-to spirits are rum (emphasis on funky Jamaican-style as well as Martinique agricole) and whiskey, with a preference towards rye.
Day-to-day I work in what's easiest to call a brewery in the midwest, although the majority of what we do isn't grain-based. I'm afforded a lot of opportunities to take home leftover fermentables - recently, 41lbs of 65 brix watermelon juice concentrate that's destined for a brandy, half a sack of 2-row, and around 30lbs of 68bx white grape juice concentrate.
