trying to figure out cuts from stripping run. 9G rum wash

total newby team that has only has success with grape juice brandy recipes.

this wash was 1G of backstrap molassis, 8 lbs of brown sugar, all fermented together 7days , no dunder, no oils, nothing typical 1st strip. 8-9 gallon charge.
This data is in pints and proofs. (zero pint tossed , 145P) 1 135,2 130,3 130,4 125 ,5 120,6 112, 7 110, 8 105, 9 100, 10 92 , 11 80 oil, 12 70 oils, 13 65 oil .

just by the numbers looks like 2,3,4,5 total of about half gallon and the oils can go into a spirit run. (total about 1 gallon mixed with 2 more water for a 3 gallon charge ).
they have been using tips from pugi and buckaneerbob.
What suggestions do you have with data provided.

Typically, folks don't make cuts during the stripping run. Just strip the excess water out to make cuts easier in your spirit run.

When you do make cuts on the spirit run, rely on your taste and smell rather than the numbers. If you get nail polish remover or artificial flavoring, you're still in heads. If you get wet dog or cardboard, you're in tails. It will get easier to do if you let your jars settle for a day or so before you start selecting your hearts jars.

I’d put the whole lot into your spirit run - only adding water if you have to get it below 80 proof (40% abv). This is to maximise flavour. Ideally you’d be under already.

Then smaller jars (if possible, like half pints) to make your cuts a bit easier/more interesting.

Rum cuts are especially tricky at the tails end I think. I’ve never tasted the traditional wet dog/cardboard, more like a grassy sour/sweet thing. Which is nice in very small doses but quickly goes bad.

the team reported back with this testing.
take each jar and convert to 80 proof.
1 tablespoon at 60ABV or 120Proof would need 1.5 teaspoons of water .

This was done through each jar deciding how much water to apply to the tablespoon of hooch.
3 , 4 , 5 and 5 had some maybes in the group.

everything else was no.


probably not great but, its a learning process.

something tells me there are early bed times in store for them. :crazy:

ill suggest they run 2-6 and the versions labled oils. 40abv-20abv

I agree with the others .
You should rerun the whole lot again ( leave out jar 1) as a spirit run and then do your cuts.

But before you do that , put down another wash using Dunder from this stripping run .
Then do it again .

Once you have collected three lots of low wines , add them all together and do the spirit run .

Next time you so a stripping run , collect it all in one big container and keep collecting until the spirit in the container has a combined abv of around 25-30. At this stage , what is coming off the still will be close to 0-1% ABV .

Tails have no place in Rum and will spoil the whole lot . Tails do not age well in Rum . What makes Rum taste like Rum comes from the heads and a few years in a barrel .
If you intend to drink it white , be a bit tighter with your heads cut .

You can put aside all the jars you didn’t keep and add them to the next spirit run . This will improve the taste of your next Rum and give you a significantly larger keeper cut .
