Plum brandy inspiration
Hi everyone. Am just a greenhorn, been reading seems like forever lol. Did not think a I had anything worthwhile to contribute but now I think I do. Long story: Been making wine forever so keep that in mind. 2-3years ago made some plum wine from a tree in my son's yard. Did not like it at all.,.tried to run it through a pot still and still awful. Fast foward to couple of months ago. Came across 40 plus lbs. Of plums (from same tree) in a freezer. No more wine for me! Thaw it,remove pits,#1 mistake =add sulphite, #2 add pectic enzyme, #3 add water, #4 add sugar, #5 use bakers yeast. What else can I screw up? Remember - brewing wine? Anyway. ... ferment till dry. Strain juice into boiler, put solids (plum skins) in large painter strainer, suspend it in boiler put lid on and flip the switch on. I run it in pot with power reducer? Nice and slow. Let it air out till next day and it was soso. BUT I saw potential so dilute slightly and run again. Wow am blown away! Some months ago I talked about slivovice to my son and he brought me a bottle of it. Was so excited! Poured a shot-harsh and disapointing. I Was expecting better. But this stuff--- smooth and fruity. Couldn't be happier with the results. So that's my story. Thanks reading this far.
