Another Riveting Introduction

Post by barbar0ssa »

Hi All, I'm glad to be here and am really looking forward to moving from enjoying drinking spirits to enjoying making spirits! :D

I have a vevor air still with a power controller and have run a bottle of Carlo Rosi Chianti and a box of Franza Chardonay to get an idea of the process. Both are almost drinkable!

Most recently, I've done 6 gallons of molasses wash (terminology?) Which of course required quite a few stripping runs from my tiny still, but now I have 1.5 gallons of 40% low wines that I am hoping to dilute a touch more and run 2 spirit runs tonight.

One thing I've found so far is that there is a very strong "rubber band" flavor that has seemed to come through every jar in the process for all of my runs so far. I am hoping to get rid of it by running my spirit run super slowly. I guess I'll find out soon.

I'm super grateful that a resource like this exists, and now I'll go work my way through the rest of the required reading.

Welcome. You are correct in the use of the term wash. Mash is for grain in which the starch is converted to sugar. Molasses, the sugar is already there.

after the spirit run and cuts, put it on wood and let it age and the rubber band thing will go away.

Hello and welcome!! I had some pretty funky flavors in my first rum and 6 months on oak fixed it, a year later and it's even better!! Have fun and enjoy the ride

Thanks for the welcome.

I might have cut a little tight for rum, I judged my hearts as the middle 33% of the run - was hoping for more than a bottle from my 6 gallons. I found whiskey barrel stave chunks they were selling for smoking and split some of that to fit in the bottles. Hopefully I'll have something tasty in a couple of months!
