Just Doing My Homework

Hi Everyone,

I'm a newbie who is fascinated with our many local craft distilleries here in the PNW of USA and wanting to try creating a few beverages of my own. I love to cook and I'm a chemist by trade, as well as someone who has to research the holy heck out of everything before proceeding. I was recently gifted a new copper alembic, but need to do a whole ton of homework before even deciding if I'll move forward. Definitely want to support legalization of small quantities for home use. I really hate that I cannot cook up a batch of beverage on my own property and at my own risk...
