Hi all! I have been homebrewing for years and recently got into distilling using an Air Still. I am mostly interested in making the sort of stuff you can't really buy in stores, alternate grain whiskeys, mixed fruit brandy, etc. Recent creation I'm most proud of is a whiskey made from German rauchmalt.
Current process is, ferment 2-5 gallons of wash. Stip a gallon at a time and then do a spirit run with a combo of the low wines and whatever leftover wash I have. Recently added a rheostat so I can turn down the temp a bit. Works well!
In the near future, I am looking to upgrade to larger batch sizes, at least for some things. Specifically, I want to start using my ten gallon Anvil Foundry mash/boil kettle as a boiler.
