Another Newbie

Post by gavinwa08 »

Hi everyone. I've been lurking around the forums for several months now, reading recipes and still info. So I figured I should join the community rather than just using it for info.
I've put together a modular still with a 65L digiboil. Started about 7 months ago by a mate lending me his Alcoengine pot still attachment to give it all a go. It has been 7 months of spending money on new still bits and brewing / running all sorts of stuff.
I'm currently running 3 x 3" bubble plates under a packed column section, then around to a 2" shotgun condenser.
Had some Ok results with Molasses based rum.
The Bourbons have come out very drinkable but I'm a mile away yet from anything matching a retail bourbon taste. I did one from Polenta and wheat which made an OK drink, pretty complex flavours. So I put that in a 5 litre barrel to sit for a while and see how it goes.
Jumped into trying an AG peated scotch. Tough one to get the cuts right to keep the flavours needed to age well but not be nasty. 3 months in a small barrel now and it looks to be going in the right direction. Fingers crossed.
My mate has a lot more experience and makes some really nice wheat vodka and neutral spirits in his reflux setup, so we work together on big brews of that so he gets Vodka and I get base for making Gin.
I enjoy making the gin as chucking in all the botanicals is like making a cake or something, plus it's ready to drink pretty much straight away. With good base spirit it has been really easy to get a great tasting Gin.
I doubt I will be able to input much for quite a while as it is quite a learning curve, but it's great to be here. The learning curve is definitely easier with such an awesome resource like this page.

Cheers
Gav
