Distilling for non-alcoholic reasons :-)

Hi -- just joined -- I'm a youtuber and geek... my latest obsession has been the application of chemistry to determine the content of certain wild foods in my area, and for that purpose I have need of distilled water. Thus, I am making a steam water distiller. I know this is a lot less complicated than the distillation discussed here, but hopefully there will be enough overlap for me to pick up some wisdom.
