You laugh. A few weeks back I had a very enlightening conversation with copilot about whether to build a 10 or 15 gallon thumper. It also gives great answers to questions like how many tablespoons of pickling lime should I add to a thirty gallon wash to raise ph from 3.5 to 6. AI can absolutely be a valuable tool for the home distiller but we need to sanity check it with common sense to make sure we don’t get unsafe.

That said, I have been using Omega dry Lutra Kveik (a Voss sibling) for almost everything recently and it’s been a godsend. Very violent little bastards that love to blow up airlocks. Ferments most of my mashes and washes in 2-3 days. Just did a single malt that finished to .99 in 24 hours at 85°f. Brilliant if you have rudimentary 1 way temp control. I use heating mats under insulation and it maintains 85 ok in my 55 gal barrel in all seasons.

I know bakers is the favorite here but I don’t see myself using anything but Kveik in the future.

I've been using Grok as well to help with research and setting up procedures. It's been working pretty well!

I stumbled onto Omega OYL-501 Gulo, a hybrid yeast. It attenuates to 90% and floc's out plenty. Alcohol tolerance at 12%, can ferment up to 82f, and good ester production, no phenolics! I'm trying it in a bourbon today.

I made an IPA , then a Marzen and a Boch from Voss Kviek. All three beers were popular with my friends. I've harvested and re-pitched the yeast after the first beer. I have a quart of yeast ready to go for my next whisky ferment.
