Revisiting because I got a bit of inspiration and wanted to check out the videos. What a great thread!

It's funny the "shallows" were starting becoming popular for whiskey production in Scotland Ireland and the US around 1850 and got a seriously bad reputation for producing shit whiskey but they seem to make good brandy... I've never had brandy made this way but I've spoken to a few that have and they said it's great. Curious as to why?

The use of oat straw as a makeshift false bottom is clever!

False bottom and one of the stills used straw as a foam breaker to limit puking.
The majority of the boilers are similar in design, with wood heat and a wide shallow bottom.
Some of them almost look like a big copper skillet. Reminds me of the song Fat bottom girls.
The boilers are much different than the "traditional moonshine stills" used for prohibition.

Well... they do make the world go round..

Not necessarily... wide flat, doomed bottom, wood or coal fired they even used chain or paddles to stir the beer. The biggest difference seems to be the head, much larger taper on the whiskey heads.

Tip over pot to empty, "perculator" to keep from scorching, water seals for ease of assembly and a "tin can" condenser.
What's even better is the distillery is on a small cart for transportation.
