My guess at the functional purpose of the slobber box is that someone had an overpressure that blew up the boiler when a mass of grain puked and plugged the worm.
A wood fire can be difficult to throttle the heat quickly to stop a puke with no sight glass on the boiler to see what is going on.
The slobber box provided a little insurance from having a catastrophic explosion.
