weird white film on top of racking buckets 48 hours

Post by planohog »

Its been about two days since I removed the beer and did the squeeze from the grains, and yeast. Well its got a film of white, smell is not weird,
im going to strip it, it was a HBB mash. Never had this before, but I normally strip next day. Any tips , or did I create something that needs to meet the kitchen sink.

Its likely the beginning of a lacto infection, run it soon. Or get some acid in it to crash the pH so it doesn't get worse

Sounds like it's just a lactos. If it smells like pineapple go ahead and run it. But if it doesn't you might want to wait a few more days till it does.
If it's got hide or hair, I can ride it.
Wheels or tracks, I can drive it.
Rotor or fixed wings, I can fly it.
And if it's grain or fruit, i can make a drop outta it!

Probably a lacto, or maybe a sneaky drosophila got in while you were squeezing and it's the start of acetobacter.

That white film is called a pellicle. It can come from bacteria (lacto, pedio, aceto...) or wild yeast (bret) or a combination. All of these will sour the beer, I believe only actobacter is really going to hurt the beer much and even then it is not supposed to be a super fast process. Lots of sour beer guys collect and share pellicle pictures you can find lots of them with a google image search.

The pineapple comment above I believe only relates to butyric acid. If your beer smells like vomit (butyric acid) do let the wild bacteria and yeast try to convert that into something better (ethyl butyrate, smells like pineapple). If you don't smell any vomit you don't have butyric acid and no point in trying to get it to turn into pineapple.

What homebrewery said

Also lacto isn't a bad thing depending on what you're making. Whiskey and rum, all good. Vodka, brandy, teq, gin not so much

When people tell me I'll regret that in the morning, I sleep till noon.

I hope you saved some of the lacto. If you like the flavor and you saved some you can always add it to the next ferment.

i did not, figured i was creating a trashcan load . but it turned out very nice. I had another mistake that was due to the cables of digital meat thermometers being very unreliable. I had the alarm set for 150, and it never went off , the temp stuck at 165, next morning it 100 ish so I missed my point to at sebstar gl. I boiled up a few gallons and poured it in trying to increase the temp, then went on and added GL. my strip run did not produce as much as is identical sister that was run correctly. The ABV way down, but like all of you , RUN IT . I did and it worked , left it in the swamp to age awhile. If i ever get there again I will save it. Note:I have been bit by the unreliable meat thermometer several times now, just cross check your readings with a old school unit too.
