White dog keeps changing smell and flavor

I have a two week old run of a sugar wash I did. 80% Corn 12% Malted Barley and 8% Rye. I always blend it and proof it and down and let it sit about 3 days before I judge it as a "final" product. Ill sample a little everyday but every single day I crack the jar I get a different personality. Just a couple days ago I opened it and I got overwhelming barley smell and flavor, yesterday I got almost a straight corn smell and taste. One of the days the Rye had a bite and the other it didnt.

Whats going on with this? Or am I just getting nose and taste bud blind somehow?
