Fruit brandy looses taste after time

What am i doing wrong?

As title says: i did several fruit brandys (apples, plums, quince, fig, grape). Fresh, within 1-2 months, they all taste delicious, lots of fruit aroma.

But after aging, they "all" loose some of the fruit taste, and i get kind of... i would call it "musty basement" odour.
Yesterday, i had a sip of a 2 year old, and it's not getting better as i hoped for.

No, they are not stored in the basement, usually just in my home, glass bottles with cork, no wood. And no, i don't open the bottles "all the time" (of corse a little sniff once and again can happen)

Could it be, because i added some sugar to the brandy? Bevore, i only had a very small still, so i "had" to add sugar.
Always strip- and spirit runs in a pot-still, with proper cuts.

I collected right now some quinces that i really like as spirit, this time, i have a bigger still, and maybe enough fruits to try without sugar (or just a very little bit :oops: )

I could understand to loose some of the fruit taste, but i have no idea where this "side taste" could come from?
