I'm making an all grain vodka mash using Ian smiley's recipe (https://brewhaus.com/wp-content/uploads ... pXoIglp66M)
it's the fifth time I've made it and this time I'm really having problems converting the starches into sugars, in the past it's always taken a little while as i've left overnight to check and it's been fine but this time the iodine test is just showing black. The only difference is i'm using different grains
I'm using;
4,000g TMM Rolled Wheat Flakes (Flaked Wheat) (Uncrushed) https://www.themaltmiller.co.uk/product ... at-flakes/
750g Simpsons Malt – Caraglow (Fine crush) https://www.themaltmiller.co.uk/product ... -caraglow/
The PH is 5.75
I've tried the following;
- Reheated the mash to 66.5C and maintaining it at this temperature for over 30 minutes (constantly stirring to avoid burning the grains)
- Adding alpha enzymes to try assist
- Re-calibrated by PH tester
- Politely asking the mash to turn it's starches into sugars
