Finding the balance of quality and speed

Im just curious on anybody who wants to chime in.
I generally run what I consider slow but Im warp speed compared to some people I read about. Ive seen some people take 12-14 hours to run. At what point is it too slow? Cause the way I run about 7-8 hours regardless of boiler size seems to do the trick and for me keeps things pretty well separated. Ive ran from a half gallon boiler to a 20. And it seems like the 8 hour does the job. I run a little faster through the foreshots/heads then I slow it down when I know Im getting close to the hearts. Every pint I catch drops about 2 proof til I get close to the tails and that point it starts dropping 4 points.

For those of you running slower what have you found is the trade off?
