Mash with hot water from tap?

Post by Osse87 »

Has anyone mashed with hot water from the tap? I'm living in an apartment and just tried for experimentation to use hottest water from tap (around 55-60°c) to just heat to mash temp for a small (less than a gallon) all grain malted barley/ wheat flour mash at 64°C. I only heated the water to about 71°c then added the fermentables I didn't boil or anything.

I also cooled the water and tasted it, taste very similar to cold tap water just something little different maybe. There was a little lower pH in the warm water from the tap also.

If the mash ferments as predicted without an infection I might try a bigger one and run it in my still. Could there be any danger involved with lead or something leeching into the mash water risking to get into my product? I'm distilling to 96% then dilute with cold tap water.
