I tried a bigger faster mash this time.
I sprayed my 30 gallon drum with a strong bleach and water solution, added antibacterial dish soap, scrubbed and rinsed and let it dry upside down, followed that up with star-san then,
I mixed 10 tablespoons of ylay with ½ a cup of flour and warm water in a quart jar and set aside
61 pounds of pretty finely milled grain was stirred into to 10 gl of 150°f strike water, pitched yeast and added 12 more gallons of warm water for a total of 22 gallons of water.
I'm hoping getting the yeast bomb pitched within 7 minutes of mixing the grain and water will have not given lacto a chance to get going.
Doing a little research, best I can tell, I should be looking at an sg of 1.067ish, if I get at least a 75% conversion rate that should give a beer with a minimum of 8.8% abv.
This will be sitting outside in the shade for fermentation, expecting highs in the upper 80s with overnight lows in the mid 70s.
Any suggestions on any of this?
I do have an old sleeping bag I can wrap it in if needed
Edited to say, I just checked before I went to bed, maybe 2 hours after pitching and it's bubbling away
