I want to make grappa/brandy with a Vevor kit with a thumper. My primary has just water and sugar using the ratios given in Compleat D. I cut up 1 pear and added 1 spoon of raspberry jam to the mash. I have another bucket that is making Barolo from a kit and will have the sediment done well before the brandy mash has finished.
1. Should I dump all the lees from the wine in the primary or leave some for the thumper? There is no skin, stems or seeds, it will be mostly tired yeast with some wine flavor.
2. is it good to pour two cups of wine in the thumper?
3. what about adding a cut-up pear or an apple in the thumper?
