I learned to distill from this forum and the wealth of knowledge it contains about 13 years ago. I never became a very active poster but always held this collective in high esteem.
I was quickly steered away from potential hazardous still building materials and opted for a 12 gallon Kentucky style pot still with a Liebig condenser.
With this rig I made many a fine drop of Uncle Jesse’s, Booner’s, rum and even a batch of triple distilled Irish.
I tried aging protocols involving chips and then sticks but quickly found that there was no substitute for a barrel and time.
It’s been a long time since I’ve even fermented anything other than homemade curtido or kraut. But with the current friendly legislation in my home state, I’m looking forward to getting back to work.
