Finally bottled my first badmo clone, 4 years old. The wood was from a once used 5 gallon whiskey barrel from a local craft distillery.
It is a rather plain bourbon, 80% corn and 20% pale ale malt, it is special for me. The corn came off my father's farm. Although the farm is still there and I could easily get corn, Dad is gone, this will be the only bourbon I can ever make that he saw the corn grow. Only wish he could taste it now. He tried some at 18 months and thought it was too strong. It did still have some bite, I think I cut a little too high.
As for the product taste, like I said rather plain, very smooth, medium sweetness and caramel flavors from the wood. Went into the barrel at 62% and came out at 64%. When proofed down I ended up with 11 bottles.
I refilled the barrel with a dry mead. It was made with wax melt/heater honey so a stronger flavored mead I think will stand up to the bourbon flavors that may remain in the barrel.
Up to this point everything I have had was from glass jars with wood fingers and usually 18 months to 2 years old. I love this hobby.
