Hi y'all, Ive read a good bit on this forum before the lockdown and realized recently that I need to create an account here now to read stuff!
I've been making Koji since about 2019, mostly just for food related stuff, but I've been obsessed with shochu. I recently leveled up my Koji game and feel confident in being able to make something high quality with it! I love Koji and it's aroma, and I really love the unique flavors that come through in some shochus. I like sweet potato, rice, and sake lees shochu, not too keen on the barley ones.
I'm currently building a vacuum still to make sweet potato and rice shochu. I have no experience with either but I'm excited to start making something!
