Just finished blending and tempering a real nice neutral, 15 bottles at 100 proof and having a bit to celebrate the first full run of my big glass column.

little of this and little of that as I sift through the bottles and top everything up. Wheat Single Malt from 2012 is rockin it, Apple brandy from 2012, barreled until June 2015 is like a warm caramel apple pie.

big surprise working the shelf to top up stuff, found a 3L bottle of 2013 Apple brandy put away at aging strength. YOOHOO. Most of 2013 is in jars at the moment, damned if I remember what I did, but must have run out of jars that day. Seems my quart mason jar stock goes from 3 dozen avail to none sometimes as i switch from barrels and back, fill gallon jars after aging etc.
In theory there's no difference between theory and practice. But in practice there is.

Downed some rye bread whiskey. Gets better the longer I stash it. During dinner ... a few glasses of wine and a bit of Bols very old genever. Some Drambuie with coffee as desert. After that a glass of Turkish Pepper. Nice & Salty!

Right now?

A glass of water prior to hitting the sack. Hydrating is important!

A weak commercial hard cider fortified with <1 month old UJSM. Oddly, it makes it a lot sweeter.
Makes it a much better buzz too.

Some white sweet feed fresh off the still  tasted better when ice melted, but sure makes a case for ageing!

A whiskey sour with 1 year old oaked sweetfeed. Ran this batch much deeper into the tails than I had before. Turned nice after a year on oak

Last night I had a vodka and lemonade made with URRV. Later on I sipped on a couple ounces of neat URRV. It's still a little young (2 months), but it was amazingly sweet. I proofed it to 50% and it was a little hot in the mouth and down the throat - don't know if it was because of the high proof or maybe a little heads or sugar burn. It was a patial AG with about 3 lbs sugar per 4 gallons of wash. I've never been a vodka drinker, but I liked it very much. Might have another tonight.

A test of the latest COB lo malt, enzyme whiskey. I sent a small sip out to a friend, so i thought i should taste it.

A few weeks on oak, it's well cut and blended (IMHO) but the corn is still grainy, has not turned sweet yet, so the finish is a little dry. pretty drinkable, i think i'll have another!
