Out of high test until the next ferments finish in a week or two . Just sipping on blackberry until then . I do have a couple of half gallons on oak that I'm smacking my fingers out of to save them for the next gathering .

I have been waiting a couple of days now... earlier this week I received about a half pint of the world famous TB 5th gen UJSSM.
I am sitting down with it now and am going to reread the Jedfest thread as I sip on it.

Rager's 60%corn,20%red wheat, 20% malted barley in the white. Mighty fine drop that will hang with tb's gen5 uj.

I will be the first to admit that I am no whiskey connoisseur. As in I really have a difficult time in describing the flavor profiles of what I like.. That being said here we go.

Not knowing what proof I was at and trying this as a sipping whiskey I added about 4 cubes to a rocks glass and put in TB's UJ. I swirled it around a bit and put my nose to it. Ok this was an experience... My mind thought syrup and my mind was reminded of the corn I throw out to the chickens every morning.. Very hard to describe. Definitely corn but WAYYY more refined... like I said I am not a connoisseur.

I thought I have the some of my own.. The best I have made so far.. The best cuts and what I am the most proud of. I have a jar that has been aging on glass since the middle of April. (unopened just sitting in the garage). I thought I would compare them.

Hands down TB! His 5th gen is WAAAYYYYY more complex then mine. Think corn, Think Syrup feel but without the over sweetness you think about with syrup.. Damn hard to explain .... It's good

I am sipping the same except I tasted it at 130 and proofed down to 95 so I got a lil bit left. Best smelling corn likker I ever had the pleasure of drinking. To me I smelled fresh made caramel popcorn. Taste sweet no burn till it hits your belly,yum, with a finish that reminded me of. The smell rich fresh turned earth. Not dirty but... Damp Forrest floor- composted leaves. One of my favorite smells. I associate that scent with wild yeast due to a uj that started on me all by itself once. Very pleasant.i like mine but I really like this too.

Suck it up buttercup. My friend, you got a rep now that you got to live up to. Hell man, you probably already made better likker than that gen 5 that nobody but you ever tasted. That's the major problem with this hobby - we mostly wrapped up in our own cocoons with only words amongst us.

6 fingers of Blantons.... I thought I liked it but all I can taste is heads and tails. The first didn't taste any better than the last. I taste apples and I know that is not in it but can't imagine how good it would taste if there were good cuts.

If you can wait six months go for it... Mine never makes it past the point where the cinnamon begins to fade and the applecranberry taste comes to the front....bout three four weeks. Keeps me out of what's ageing...

Had another neat URRV last night. I like it, but definitely got some heads in it. As I remember, the heads cut was very difficult - guess I missed it. I have an "Oden's Easy Gin" macerating using the same URRV. I guess I'll be doing a small heads cut when I run it. Might do the same with what's left of the vodka.

Been more times than I care to admit. :shifty: I mastered the easier tails cut on my first day out making vodka but the heads cuts doesn't just "come natural" to me yet. It requires much more attention to detail.

The more water I add before tasting, the easier it is for me to isolate and identify heady flavors. YMMV. Overall you'll be satisfied with the decision to distill again. Unlike in a whiskey those heady flavors aren't going to age into anything desirable.

Bear, URRV is one of those spirits that is so mellow to the taste that it makes heads harder to detect. Maybe it's something inherently true with most neutrals - idk. Heads, in general, have always been a bit difficult for me to detect too. Seems somewhat easier with a whiskey or brandy though.

S-C this is he best way to educate yourself on heads...expensive! but effective as hell at helping you learn what a shitty heads cut tastes like. My brother thinks this stuff is all that...I'm with halfbaked, all i can taste is heads and tails...but it was fun drinking some of his stock last night, at least i didn't have to pay for it.

Oh, I think I know what a shitty heads cut taste like, but usually only after the fact. After years of abusing my taste buds and olfactories, the cuts don't come easy. I need to have my daughter around when I do cuts - she has a talent for it.

I poured a taste of my first-ever batch, an AllBran from back in August that I thought I'd gotten too greedy on with the cuts. It tasted off back then, and really got me down, but I threw a couple of charred wood chips, a vanilla bean and ~1tbsp of agave nectar into it back then anyway.

My wife stole my glass, then asked for seconds, then for thirds. It's turned into a really nice sipper.

The taste of that jar had me making super-tight cuts ever since, now I think I need to cut a little wider and wait a little longer.

It's funny how I have a taste in my head, and if I don't get it I get discouraged. But then I try sipping some Evan Williams or some JD and I realize just how much better I like my own, at least for sipping.

Tb's oaked 5th gen uj mixed with sanpellegrino limonata. I ain't one for mixed drinks anymore but damn I could get use to these.
