Sipped a few ounces of CB&BM last night. It's about 4 months old now and tasting even better than the first 750ml bottle I proofed down. I can see I probably jumped the gun on that first bottle. This might have been one to hold onto for a bit longer.

I've been working to build up some stock, cornflakes and DWWG, on oak. I'm trying to let it age as long as possible, but at 2 months, the "prime" cut jars are starting to look and smell heavenly. I'm trying to reserve the lesser cut jars for sipping until the best has at least 3 months, but it is getting hard to avoid the siren song.

Sipping my first UJSSM that was ran 6 or so weeks ago.
Straight from the jar at 60% it seared my nasals on the nose.
Proofed to 45% it was still hot.
Proofed to 35%, I could finally start to taste some sweetness and that lovely corn taste.
All I can say is, it can only get better from here.

Wooday, did it burn on the tip of your tongue and lips and all the way down? If so you went too wide on the heads cut. No sweat ,it happens. For drinking white try tasting for cuts instead of smelling. Clean hearts taste sweet with no burn in nose mouth or chest. It ain't gonna hurt you so bottoms' up,and enjoy. Next time try narrower cuts for drinkin white.
I'm drinking Gen 4 ujssm corn and oats. Sweet and smooth at 110 proof. Almost too sweet...

well aged and heavily oaked Jimbo's all malt, 100% 2 row. rich smooth caramel giving way to toffee, with a warm and spicy finish. it is smooth and sweet, i think i get a bit of oranges in the middle too, but i'm going to have to try agin tomorrow to try for more subtle flavours.

sipping on some River Pirate (dunder pit sorghum rum) and coke, it's only three months on oak and dried fruit but I had to have a taste. I love this stuff I need to make a trip to Missouri and pick up some more sorghum.

Sharing some cinnamon stuff with my wife, Macerated a cinnamon stick and part of a vanilla bean in a bottle of neutral for a day or two to get a good cinnamon flavor balanced by the vanilla then added sugar to the wife's taste. It's very nice stuff. Decided to play around with the various tasting glasses I've been Buying for doing cuts and blending. I have to say for the best glass for sampling and blending the Mikasa Chateau cordial has yest to be beat.

Blanton's. I was up at Buffalo Trace when they were opening a bunch of barrels and bottling that stuff...it smelled nice but they didn't offer a taste, but they gave me one of those little horsey tops for the cap.

Somewhere out of the BLUE, 12 oz of Muckalee Creek H20 arrived in my mailbox this morning..... (and I thought my christmas cards would make peoples day... shoewee was that an understatement...)
I am staring at this bottle of 90 proof M C W and am amazed that Santa heard my wishes this year....
My Brother who I haven't seen in 2 years arrives in town Wednesday. I have his favorite cigar in hand (having no idea that Muckalee Creek water was on its way). So come Wednesday evening, a little smoke, a little grain and oak and some good times to catch up on... God Bless the Flatwoods of Georgia and all their bounty!!!

What Proof/%ABV are you aging on honey locust at...??? A month is rarely ever long enough...

Aging proof is 120 - 130, or 62.5% - 65% ABV... At 55% it will take even longer to age...

Tonight i am drinking HDNB COB2ROW. I am drinking it on ice. It was sent to me in a package from BearRivers Bbq collection along with other samples from the meeting. It is a smooth drink. No rough edges whatsoever and leaves a pleasant taste with a slight inhale over the tongue. It comes over as a light whiskey and a good sipper. I would have no problem settling in with a bottle of this for the evening and sharing with a friend bragging on the gift factor. The oak does not seem to match the color. More oak the color suggests. For me i like oak heavy and darker colors i guess this is why this one surprised me. Overall good job HDNB and thanks for sharing guys.

Just ran a wired spirit run on the pot- SF with Apple and banana low wines.
Not bad!
I like it better than the frosted flake I ran right before it.
