Haven't made the cuts yet, so everything is still breathing.
I''ve been sampling from the jars, figuring out what's a keeper and what goes in the feints jar.
If it was going to be aged on wood, almost all of it would be hearts. :thumbup:
But I'll be drinking it young and white, so a tighter cut will be done.
Besides the CM column needs some AG feints, so I can make vodka that has more flavor than the rules allow.
For my grey haired baby sister.
On a side note, I'll be adding another plate or two. :lol:

I'm still experimenting
Based on flavor, I like the compromise of running more plates harder.
Than compared to fewer plates slower.

Watching plates bubble is like watching a fire burn, you just got to keep looking :lol:
Damn back then, I was a fool trying to drive the bubble caps that hard. :lol:
Now I know to keep the takeoff to a little less than 1 gallon per hour.
Faster than that and entrainment starts causing smearing.
