Just run the 3th gen of an UJSSM made of Muesli. A breakfast cereal being a mixture of Barley, Oat and Weat flakes, and some raissins and nuts.
It tastes already very nice. 4th gen is already fermenting.
Good recipe along with the cycle.

Just made my second run, which was my first "sour" run. Ran great! This whole recipe is very easy for a newbie, plus you can begin to modify it as you go along and experiment. My post about the run is the the "my first" section. Wanna try and run as many generations of this as I can.

Is ther a certain percentage by volume that you use for the foreshot discard. I've understood it as for every 25 liters you discard 250ml. Is this the same for most anything you run

I toss the first 150-200ml just to be safe. Since I toss all the foreshots and feints into the next batch, over time that first 150-200ml of nastiness can add up.

Rubber Duck and I once joked that compounded heads should be served to guests that want to add coke to your booze. How bad would that hangover be?

It does get really concentrated after awhile and has to be thrown out.

My first run was today with my pot. It was a new build and yes my first still build.I did the vinegar run and then ran a gallon of wine through it. I siphoned off my wash the other day and i end up with bout 4 gallons to run. I could have pulled more out but I am a newbie. I didn't want all the solids, would it have hurt??? I followed the UJSSM as best I could I end up with a half a gallon of product. I discarded the first half pint and started checking it abv after each pint. they went as follows, 120,110,90,75,30. Everything seemed normal based on what I have been reading except when it went from 75 to 30 on the next pint. I just figured Id ask the experts, what do you guys think. If My attachment works here is a pic of my rig.

Nice rig jmesle. Ok first off you should be trying to take smaller samples when your a newbie, 200 ml per jar seems to be the consensus. Also I assume you were talking about proof not ABV in your posts (there is no 120 ABV lol) but your readings seem about right. Also the ABV does fall off a cliff after awhile running that means your into the tails. Same thing happened to me yesterday.

2 lbs chops in a bucket
will dump it back in with first mash 2morrow

For a first run 65%ABV is great, i barely got that on my second run. However why could you only get 3 gallons of mash on a 5 gallon ferment? I rack off my wash and get close to 5 gallons.

BTW anyone notice how aggressive these later ferments are getting? My first ferment took about 9 days. Second about 6 days. This last one took off like a banshee it was bubbling hard an hour after i made the mash. The temp of that ferment was higher too. Well that was Saturday and yesterday (Tuesday) it looked like it had finished already. Checked the SG this morning and it was .994. It IS done, in 3 days! I did modify the wash a tad, a little more water, a little more backset and a little more corn and sugar. I'm gonna run it tomorrow. Stuff smells great, like a beer.

Seems a bit like a small batch, I just did my first run of UJSSM and got 5 gal. from a 6 gal bucket. Seven pounds equals about a gallon but not two.

ok maybe it was more than 3 gals and 7 lbs of corn might be a bit more than 1 gal volume...anyways i wasnt shooting for quantity ...was just wanting to see if my numbers matched as far as the run compared to others

Yeah your about right. The corn takes up a lot of space and I roll mine out in quart jars so we are almost the same in volume to ABV. I tell you what I love this recipe and gets so much better over time. I am working on a sweet feed sourmash now. Will post the results.

last week i finished my first UJSSM ,it was my second successful attempt at distillen (first was a :econfused: sugar rum ) and im astounded by just how good it is ! started another 40 liters straight away because this batch won,t have time to age :lol:
ps i made a simple carbon filter and passed it through it and it and it improved the taste quite a lot ( sorry not good at cuts yet ! )

Well I just ran my 4th generation UJSM. I threw out the first pint then saved everything down to 140 proof, got 12 pints then ran the rest into a jug down to 10%. I let it air out for 24 hours , tasted each and kept it all! Mixed together it is 150 proof with a lot of flavor! I added american oak chips and will monitor it for the next several months untill it gets some color and oak flavor.
I have been using 100% of the backset and adjusting the ph with Calcium Carbonate. It made a great difference in the product over the 25% I had previously used. At the end of the run while everything is still hot, I add my sugar and cracked corn to replace the spent stuff I skimmed out of the fermenter. When it has cooled off 12 to 16 hours later, I pour it into the fermenter. I noticed the corn is almost gelatinized using this method.

Just did my fourth run too and I've been noticing something, after each generation the tails seem to come in later and later. 2nd run tails come in heavy at 50%abv, 3rd run they came in at 45% abv. This run? Just took a little sip at 30% abv and tails are there, but not real heavy. I stopping keeping hearts at 40% because that's borderline drinking strength and I'm oaking this run. Even when my output slowed and I cranked up the heat there was no real heavy tails. Amazing! I'm gonna collect down to 20% and shut her down. Is anyone else seeing this? My heads are exactly the same at every run. This is why you make cuts by taste NOT abv.

I ran my second generation of the UJSSM. I have thrown out my first half pint on each run and started checkin the proof every half pint there after. my first keeper pint was about 120 proof and I keep it down to about 70 proof. The only way I would be able to get 140 proof is if I kept the foreshot (not going to) but how are they gettin the proof so high? am I doing something wrong. Both of my runs were pretty much the same. I figured I was good go. I just need to do some rerading on blending. I have been saving my cuts in jars and will blend sometime when I understand how to do it.

It is probably the difference in the still. I use a packed column still but do not use the condenser on the still head just the condenseron the discharge. I throw away the first full pint so I know all of the foreshots are gone. I start collecting at about 85% or 170 proof and save down to 65 to 70%. When all blended average is 75% or 150 proof.
You could never do that with a pot still but you probably have alot more flavor with yours.

PJD is right keep in mind if your running a pot still with 1.5 runs (adding your feints from the previous run) your not gonna get high ABV's unless you run stripped charges. Pot stills are meant for maximum flavors NOT high ABV's. My still even with tight cuts I'm just barely able to get oaking strength. This past run my "keeper jar" tested out at 55% abv so I'm either gonna wait for the next run to oak so I can add in some higher ABV hearts to get me up to 60%, or i might just start oaking this run at 55% and see what happens. I don't know why the tails are disappearing with UJSSM, but I'm not complaining. I actually kept some of my 40% abv run last night for sipping (I didn't wanna drag down my hearts jar to a lower ABV) and let me tell you, it was a pretty good drink. Had the tiniest bit of tails flavor but on a lark I dropped in a handful of watermelon cubes, after about 20 minutes all the off flavors disappeared and while the drink didn't taste like watermelon-it was darn smooth. Plus those watermelon chunks were some fine snacking!

yea you are right im running a pot still. I gess I should have picked up on that. I'm a lil new to this. What strength is recomended for oaking. I noticed you said that but didn't realize it had to be above any certain proof. Thanks for the feedback!

I have a gen3 ferment of UJSSM going and have found that a 6gal ferment is just not enough to keep me occupied and lacking a larger fermenter, I was thinking that when I do my next distillation run, while the fermenter is empty that I would take half of the corn and yeast left behind and put it in another 6 gal.fermenter, add 3 1/2 lbs fresh cracked corn to each, 2 gal. backset to each and of course the apropriate amount of sugar and water. As this recipe improves with each generation would this be preferable to starting a "new" batch? Should I atempt this at all? If so, should I pitch additional yeast? Any input would be most welcome.

Sounds like a good plan to me. A lot of what makes the later generations better is the backset. So you can always start a fresh batch with the backset of another wash. And get better results then starting fresh. And you can always scoop a little yeast out of an older gen to start a new one.

Something else to think about doing. Not sure about how big your boiler is? But if you say start 4 5 gallon batches one week. The next week run 2 of them and start 2 more. The next week run the 2 you didn't run the week before. And start 2 more. This will give you a rotation that insures you have 2 to run each week. And a 2 week ferment to insurance its done and ready. If you wanted you could also rack the older batches and let them clear for the second week.

Thank you Odin and Mr. Piss. My thought is to start the two ferments about 4 days apart. The ferment seems to take about a week, this should give me two runs per week once all is in synch. My boiler isn't big enough to do a 5-6 ga batch in one run. As it stands now I have to make two runs for a 5-6 gallon batch, so this basicly what you are suggesting PP. I am however, on the look out for a keg or SS milk can so that I can distill a 5 ga batch in one run. I would prefer a 10 ga milk can, not too big, not too small.

Ok so you are wanting to run twice a week. I would still go with 4 of them. And let them work for 2 weeks. Because they may finish in a week most of the time. But sometimes they can stall or whatever. And take a bit longer. With the 4 bucket two week rotation. You will always have one ready. And if racked. Clearer. But room sometimes plays a part in it. So its just a suggestion. Find whatever works for you. There's many ways to skin this cat.
