I think he thought the 88 gallons was the new guys batch, not your batch that the noon is helping you with.

I thought that too from the way the post was worded.

I've posted numerous times about my setup and how I run as well as many fuckups I've made . Little research here might ease your butthurt if that is what you are expressing .
Whoa, that wasn't judgement, that was jealousy.

I thought you were saying your student had 88 gallons up and fermenting. It'd be awesome to start out with that much raw material, you wouldn't be so panicky about making mistakes.

I am drips of rum goodness coming off of a nice cold worm. Waiting for the girlfriend to walk through the door any minute with the coconut cream and I already have the pineapple juice and rum loaded in the ninja ready to make me some pina coladas

Just finished a 2nd gen SF that I will have to wait to pass judgement on. 1st gen came off nice and is on wood. Right now my thoughts are to stay close to Bigbob when he pulls his jug out. So, I just put a wheated bourbon on ferment. Last month I put a modified Corene's Scotch on wood. It came off very! (difficult keeping my lips off the spout) nice but little peat, Hopefully it will make it to S3:16.

Running 4th gen USSM using dextrose monohydrate to see if there is a difference over reg cane sugar inverted. Hearts are amazing right now. This sugar is made from corn and has less sugar content and I had an og of .05 abv instead of 8% for the same recipe as before. Fermented out the same time. Costs more for this sugar, but this might be well worth the extra. Airing out it should be even better. Will see.

My understanding is that dextrose ferments out completely and cleanly. It imparts very little to no flavor profile on the ETOH. This is why it is what's used to prime bottled beer.

I just ran my first sweet feed, made with Blue Seal Pacer.

It smelled pretty sharp right out of the pipe, but after as little as 5 minutes, it softened quite a bit.

Can't wait to taste it tomorrow....

Apple feints run today :D Well mostly apple  There was a jar of pear feints in there too. Funny thing apple came across first then it went to hearts with very little smell, then at the end of the hearts came a jar of pear bomb. I'm doing a bit more refluxing right now to compress the tails and hopefully get a little more yield.

57% corn
14%wheat
29% rye malt
Total 87.5# of grain fermented on the grain in an open top whisky barrel. 45+/- gallon ferment.
Stripping with steam on the grain. Have one more strip to go then a nice spirit run. Hoping for 5 gallons to age but expecting less.
