The thing is, you are never sure which it is.

Wow, the last post here is over a year old. Whelp, here's a little update on my end. I barreled two (5) gallon barrels over (2) years ago. I bottled one of the barrels recently. All I can say is wow. It's not going to last long. I was hoping to keep the second barrel at least a year but we'll see. I haven't made this recipe since but will make sure to make at least 10 gallons this winter.

Right? I forget so much time goes in between this thread sometimes. It's become my favorite of the 3 ( although I probably have said that about them all!) Turned my wife full on bourbon fan with this. Kinda created a whole new genre of whiskey for me... Chocolate bourbon. Good on you keeping it that long. That's where the magic is. Good job.

I have two 5 gal batches of HBB doing a funny dance between a 5 gallon Gibbs and a Corney keg. Initially it seemed like it was verging on over oaked after only 6 months so I swapped barrel for keg.
I have another Corney with my Sundae Bourbon in it with some staves. Only 6 months into aging that but it's starting to turn a corner. Thankfully angel's share is only due to a loose lid on that, so I can let that sit as long as needed.

Even at 6 months I had my wife try my HBB and she couldn't believe I made it! Thanks for the great recipes! Sometime I might get to trying CROW when I have some rye on hand again.

The angel's share wasn't bad. I lost about a 1/4 gallon. Not all angle's as I was "tasting" over time. My guess I "tasted" most of the share. The barrel sat in my basement so it was never exposed to heat. I have the second in my garage that is exposed to heat and cool. We'll see where that comes out.
I use 5 gallon barrels from Gibbs. I tried other vendors but theirs are the best.

Crow by far is my favorite white but practiced some self control and now have hbb and crow aging on oak now but this weekend plan on doing the chocolate bourbon
