So I have a question I have some ag backset should I use that as my dunder or could I use some citric acid in its place I've got this bucket full of molasses and I want to do it in one big ferment.

The recipe tells you what to do for the first ferment when you have no dunder.
If you do use AG dunder i cant vouch for what it might taste like. That is your choice though.

I just use one Vit B tab / capsual per 30L ......25 gal = 94.6 L..........dump 3 in that will do.

I advise against using a bubbler airlock because I had a geyser in my wash house the first time I put down a rum wash. It hit the ceiling and we were away for the weekend.

Leave plenty of head space in the fermenter and it shouldn't be a problem.
The last one I did ran pretty hot and hard as it was in an insulated drum.....probably a bit to warm. It was about 170 L in size it didnt froth a lot. Frothing seems to depend on molasses here ..changes from batch to batch a bit.

Do you guys stir in your yeast or just leave it on top of the ferment

Give it some time once fermentation finishes ,2 - 3 days to a week if you have time, yeast and any crud will settle to the bottom the same as any wash.
It will always stay black though.

It should look like this once its settled.
I don't bother with siphoning from the top. After a week 99.99% of yeast and other unwanted rubbish is a solid layer on the bottom of the fermenter, If you ferment in a container with a tap on or close to the bottom you can draw straight off. just turn the tap on very quickly and then back off, any yeast or rubbish sitting near or in the tap comes out in the first few 100ml or so.
If using a 25-30L fermenter I draw off about 300-500ml and toss that bit away, in my bigger 180L washes a liter or two gets tossed away.
In the Youtube clip the yeasty bit has already been drawn off and I'm collecting clean wash for the still.
Not everybody will want to do it that way , but it works for me.

So I started this wash around 230 today my whole house smells like molasses and I ferment in the garage I cant wait to see the results of the hard work

Today my rum smells great and I can hear it sizzling a bit through the insulation I didn't use an airlock it's just a lid with about 5 winter blankets thrown over it sbb following your method how long to get it finished? A couple of weeks?

Its warm to the touch I ferment in 30 gallon hdpe barrel im afraid to take the blankets off because my basement garage stays rather cold it smells almost like rasins or something like that fruity I used dady yeast cos that's what I had I didnt want to waste angel yeast so a week tops? Dont let it get to hot as an insulated wash can build a lot of heat in the first few days.

I use Angel Instant Dry Yeast. It's cheap and just as good as any other bread yeast.

For making Rum
I'd recommend having 2X more yeast than needed.
Cook 1/2 the yeast to feed the other 1/2
Plan B
Uses some of the spent yeast from the bottom of a fermenter.
That gets boiled with some calcium carbonate.

So does anyone have any suggestions on aging this product? Thinking of leaving it white to compare to the other gallons I have on toast(210degrees for 2 hours)oak does it make a good white rum? I've always oaked mine so far

I’ve never liked the “rawness” of it straight off the still . Its too bold for what I call White rum which to me is more like a light Bacardi style . However I run this recipe through a Reflux still ( think packed boka or VM) it ends up a light white Rum .... very drinkable immediately .
