Don't ya hate it when the answer is staring you in the face, and ya just don't see it.
I've been using the laundry as my "distillery", much to the chagrin of SWMBO. ( she who must be obeyed )
We've got one of those electric water heaters in there, with the two elements, one's a booster if you run out.
..... and then it hit me. Fit another element in my boiler, a smaller one. Leave the 2000 watter in, for getting up to temp and stripping runs. Use the smaller one for spirit runs. Simple ..... and a smaller element is about half the price of that questionable thermostat.

I have searched the forums and 2 elements make sense.
Another option discussed is a burst fire triac controller. The cheapest optionb is http://www.sutronics.com/acatalog/BFM24 ... oller.html I just ordered one for 32 euros and postage is free.
An 3rd alteranive is to use a diode to drop the voltage by half and simply switch beteen having full voltage and half voltage. I made my first batch of grappa yesterday using grapes fermented for 2 weeks on the skins. I threw the grape skins into my electric boiler as well without any dramas as the Turbo500 has a boiler with a hidden element.
