At some point you'll just have to dig in and do some research and more importantly learn by doing.
If running the way you do don't produce a good end product, change one thing at a time.
If you don't strip, strip untill you have enough low wines to fill the boiler.
If you use high sugar washes, drop the amount of sugar, make an all grain mash.
Maybe put some water in the thumper.
Run slower, run quicker.
Triple distill.
Collect the distillate in lots of jars.
Spend an hour a evening reading in the new distillers es section a evening for even a week.
Your still isn't brilliant to be fair, always going to be hard making great booze on a small potstill like that but it's doable with practise and dedication.
