If you drink the milk right out of the tit you dont need to pasteurize.

You do it your way. He does it his way. I do it my way. It's all about a comfort zone. We tend to find our own little comfort zone. Usually a method that works consistent for us. Some go over board some don't. As long as we are doing it safe who cares.

But you never know what could happen to a wash. Hell it could get infected and after ran through the still. It could be the best thing you ever made. Or it could be a perfect ferment and still turnout like crap. So sticking to one way. Without at least a little experimenting is boring. Experimenting is good and fun. So take off the blinders and have fun. It's a freakin hobby.

And I would love to see your face when you looked in my dunder pit. Ha! Sanitation? Who needs sanitation? :lol:

Edited to add. Many beer and wine brewers have come to this hobby. And are disgusted with the lack of sanitation. It not new. You aren't the first or will you be the last.

By the way if I had a batch our to vinegar. I guess I would have me some homemade distilled vinegar. :mrgreen:

Trust me when i say i am all for experimenting if you look at my book on Amazon, you will see that the beers i make are so far off the normal path that fellow home brewers either think i am a genius or a nutcase lol. The title of the book alone gives it away, Bizarre Brews 101, but sanitation is one thing i personally do not run any risks with. Like i said and like you said you do it your way ill do it mine.

If you boil the wort after conversion you will kill off the rest of the enzymes needed to ferment out to 1.000, they keep working, and then you could get the infection you are so worried about. One of my batches did get infected because of bad Nottingham yeast, I had to repitch after a day when I noticed no activity, I ran it anyway, you know what? It came out great. I may keep that process. Youtube has a ton of videos from distilleries.

Always hilarious seeing long time brewers get in to stilling " can i see what ya doin sure mate" ya take the lid of the fermenter and here em gasp "knock the cap down with y hands and that's bout all they can take as they go for the heart pills :lol: :lol: Sorry Vance old son ya gona laugh at this ya self one day seein some one else gasp or better still have a brewing mate with ya while ya trying to scoop the magots out of ya 30 gen rum dunder

Well I dump my Dunder down the toilet after every run, so no i don't see that being an issue. I never Knock the cap down on my beers and wines so that part dont bother me either lol. And if there is Maggots in it, personally i would say its time to dump it lmao

Vance-- KoH is an experienced home brewer and distiller--- I'm sure he practices proper sanitation for beer and knows when it is or is not necessary for distilling. Personally, I sanitize for my all-grains but don't bother with sugar heads and they all finish around 0.992. One of the differences here is that we can pitch more yeast than necessary, and by doing so, can get a really active ferment that will choke out any infection that may arise. In home brewing, we don't have that liberty of over-pitching.

And... You are wasting perfectly good dunder by dumping it every time---you're losing a lot of good flavors there.
