Finally got around to a second attempt at my rum. Used what I learned from the first try, and I couldn't be happier with the results.
40 gallons of wash
5 litres of blackstrap molasses
20 kg of sugar
2 cans of tomato paste
300 grams of activated bakers yeast.
Fermented dry in just over a week, and this time, I let it clear for another week.
Took a solid 12 hours to run through my keg, I added each batch off distillate back into the keg to precharge the still for the next run( while keeping it below 40%) tossing a litre of heads from each batch, and stopping when it got even slightly cloudy.
At the end I diluted all the distillate (except heads) back to 40% and re ran it. Best rum I've ever tasted so far.
I can't thank everyone enough for all the valuable info.

I know I haven't updated this in a loooong while.
This has become a very reliable recipe for me, I always end up at the same 1.07 sg, always finish out dry in about a week, and always get the same "pirate rum" flavour.
Today I started a scaled down half batch. Same recipe cut in half. So, 20 gallon wash. The only difference this time is I'm not using the pot for the Turkey fryer I used to use. I was getting comments from a few Irish folk that they could taste aluminum very faintly...turns out, the pot I was heating the wash in was aluminum, and that was the only aluminum in the process. So we'll see how it goes.
Again, sg=1.075 (corrected for temp), new toy tells me ph=5.434, pitching temp 27c.
I was also honoured today by a fellow hobbyist (whose been doing it VERY wrong for a very long time) who asked me for my specific recipe. Because "it's very good" and he's ready to make some thing he likes.
I've pointed him here, and gave him some starting advice t correct his methods...
His previous methods included turbo yeasts, high alc ferments, usng chemicals to clean his still...not making cuts....the list goes on and on....
He has now purchased a shiny new mile hi flute. (Hopefully arriving in the next week or so? Psst milehi, you out there? Haha)
he has some of his bad alcohol set aside for his cleaning runs, and a fresh wash of my rum on the go as of tonight. (It will be interesting to compare my recipe back to back pot still versus flute column)
Now hopefully he pays attention.

I didn't always do it "wrong" just when I started getting greedy. And at the time I didn't think a little dish soap scrub followed by a vinegar/salt scrub and a steam run of vinegar were a bad idea as I was under the impression at the time that clean copper would help remove some impurities. Its been a while but im glad to get back in the game. looking forward to the first run with your recipe it tastes good now on its own.
