Up here yams and sweet potatoes are two completely different things. Going by nutritional charts alone;

Yams have 0.5 grams of sugar per 100 grams. Sweet potatoes have 4.2 grams of sugar per 100 grams.

Would be interested in maybe trying this at some point for fun, with sweet potatoes and sugar.

Yep, yams are not Sweet potatoes. Those referenced technical papers convinced me to do some Sweet potatoes when they come in.
