I don't think the type of yeast makes much difference on the cap.
If the yeast is active enough and there's something for the carbon dioxide to carry to the top.
It will form a cap.
Try fermenting on the grain in a glass carboy. You will get a good view of what's happening.
Just remembered it was a PIA to clean the carboy afterwards.
