The honey does squat, to be honest, and it can be totally omitted... If anything, the honey will slow or even stall the fermentation process... Some honey will actually halt yeast reproduction... It all depends on the various sources of the pollen and nectar that the honey is composed of... If you don't see honey in the recipes in the Tried and True Recipe forum you've gotta wonder why, eh...???
