I got the same result from a sugar beet ferment. Did a small bucket intended to blend with peat smoked barley, just for mouth feel. Finished dry but smelled like ass. It got dumped.

I think that the low starch to sugar conversion was a factor. I started that ferment at 5 brix 1.20SG, it just really didn't stand a chance.der wo wrote:Sad, that we didn't find out what went wrong.

I just tasted the one keeper jar (about 8 oz) - smooth, great mouth feel, but maybe not worth the 20 dollars to produce it.

My calculations say you should get a SG of 1.035 with 25lbs on 25gal. Your FG of 0.990 is too low for such a low SG. I don't think it's possible. A pure water-ethanol mixture with 0.990 would mean 7% abv. So if there is some sugar left (as always) perhaps 0.990 means 10%abv. But that's not possible with your grain bill... Honestly I think your hydrometer shows instead of 1.035 1.020 and instead of 1.005 0.990. It's 0.015 or 0.010 off.Oldvine Zin wrote:I think that the low starch to sugar conversion was a factor. And I wonder why one could fail with conversion using such fine milled stuff and liquid enzymes. I don't think you had such a bad conversion. But 25lbs + 25gal is not much starch of course and there was another problem perhaps while fermentation.

I know that you measured a SG of 1.020. And a FG of 0.990. But those number don't match. 1.020 has not enough sugar to get 0.990 after fermentation. Did you once measured water with the hydrometer? Should measure 1.000. I think it shows 0.990 with pure water.

Only time I fermented potatoes was to a published recipe, in a wine without starch conversion and it gave the biggest hangover headaches brew I ever made. "Fuesel oils" were the mutterings at the time and it would be great to hear how this one turns out. I never allowed a potato anywhere near anything I brewed since, so if they can be used properly I'd love to hear about it.
