Steam distillation?

Howdy y'all,

I've got a bit of decision paralysis, I'm hoping you can convince me one way or the other...

So I either want to make a steam jacket bain-marie out of 2 kegs (outer jacket will be a 50l keg, inner will be a 30l tall) OR a direct steam injector (with auto water top off). I can't really decide what is best. I'll be making mostly single run rums and ryes.

So what do you think? What would you do?
