I finished my first rum spirit run. As it is airing I am reading about rum cuts in the archive. I read something Deplorable wrote in another post- "Can you make a drinkable Rum with no Experience"
"...then stripping enough low wines to provide a boiler full of low wines large enough to make good cuts."
Does this mean that the fuller the boiler, the easier it is to make cuts?
I did enough of SSBs All molasses Rum to use up my 5 gal bucket of molasses. It gave me 5 gal plus a little more then 1 Qt of 23% low wines. I did a 3 gal charge first, which leaves me with a little more then 2 gal left to run.
Should I wait to do my next spirit run until I do my cuts? I have a whole quart of tails and the first 8 jars (200 ml in each jar) are above 78%. Most of my reading says don't keep over 75%. I know you don't do it by percent but smell and taste, but that's what I've been reading for a ball park. That would bring me up to 3 gals or more depending on my cuts.
