Everyone’s tastes are different. Scaled down to 1.25 ppg of panela I have used 18.3 oz blackstrap per gallon of wash (e.g.: 1G blackstrap in 8G total). This gives you an in the face dark rum. Lately, I only use a quarter of that amount and the molasses comes in softly at the end. I did a third-fill on a 5G Gibbs with something similar for 30 months aging. Oh.. I was planning on using 1-1/4 lbs of Panela per gallon (with a touch of molasses added ~6-8oz per gallon in total for a twist of added flavor) Go with 8 ounces.
Any thoughts on that would be also greatly appreciated

1.25lbs of panela per gallon will gave you about a 6.5% potential abv. 1 gal of blackstrap molasses in 4 gals water will give you approximately a 9.5% abv so just do the math and work out how much you want to add.
I will say rum made from panela only is boring in my opinion, adding molasses will help with the rummyness.
I should yield about 9ish percent abv (and I may add 3oz of coconut sugar that I’ve been meaning to get rid off) but I’m not sure about the coconut sugar atm
