Tasting (diluted of course) and spitting, so far, I can't find anything I don't like after the first 1.8 Liters of the 10.8 collected currently.
I'm rubbing and smelling about every 100ml off the spout looking for a shift, but I'm still pulling good flavors at 73% with no hint of cardboard or wet dog. It's got to be in here somewhere.
I figured I'd end up with about 2.2 to 2.5 gallons of 55% to age, Its looking much closer to 3 gallons at the moment.

I appreciate your efforts and time documenting this Brandy project. Sounds like it had been a success with almost 3 gallons of finished product. Can't wait till it done aging to hear you final thoughts. Makes me want to get a big ol barrel of wine to run thru my still as well. Sounds great. Just finished picking jars, and I've got 9.5L @ 74.8%. I'll slowly proof that down to 55% over a few days in a carboy and add some used French wine barrel stave fingers. Eventually this will make its way into a Badmo Barrel.
The little bit I'm sipping white at about 38% is good, and I'm sure it'll just get better.

Just à thought. Put it down a little bit stronger and then you could slow proof it in the barrel as per certain cognacs.

That though had occurred to me. As did the idea of using some of the wine oaking sticks given to me by the same friends I got this wine from.
